Got some leftover cream dancing around its sell-by date? How about that packet of dried mushrooms down the back of the cupboard that you have no idea what to do with? Here's a great way to turn them into something delicious to go with pasta, chicken, polenta, or as I've done here, with air fried gnocchi.
My packet of dried mushrooms recommended rinsing them after soaking in hot water - I opted not to do this and keep the flavour from the water in the sauce, but if anyone knows if and why this is not advisable, please share your thoughts in the comments.
Garlic
Onion
Rosemary
White wine
Dried or fresh sliced mushrooms
Cream
Cooking oil
Salt & pepper
Tips: If you don’t have fresh rosemary, use dried. Or substitute for other herbs like thyme or sage. If you'd prefer to avoid wine or don't have some handy, you can use stock or just leave it out altogether.
