Student dinner vibes with a little bit more for a quick meal - and yes, it does taste better than it looks! Pork sausages can easily be substituted with chicken, beef, tofu, tempeh or even vegetables. Add some frozen broccoli or mixed veggies for another alternative. These sausages just happened to be what I had available at the time, and whilst they were OK, I would prefer tofu, tempeh or chicken.
Instant ramen packet (any flavour works)
Peanut butter (I prefer crunchy, but smooth also works)
Sausages or other meat/tofu etc
Spring onion
Tip: Peanut butter thickens the sauce, add water as required to achieve the consistency you prefer. Coconut milk can be added for added flavour. Coriander can be a great alternative if you don’t have spring onions.
NB: Before I upset anyone, let me explain - I break the noodles before adding to the pan because the depth of the liquid in this particular pan wouldn't cover the full block. It also means the end result is shorter noodles that are easier to eat and won’t flick the sauce around. I know this is sacrilegious to some, so if you want to keep your noodles whole, that's great, it won't affect the flavour. 👍🏽
